ORIGIN OF YACON
A few years ago this root was not given much importance because its nutritional value was considered to be very low, so the investigations were left aside. For these reasons, there is currently very little information on the cultivation, technologies and processing of yacon.It is a root with a very pleasant and sweet flavor to the palate, which grows in the temperate inter-Andean valleys. This root has a high content of Inulin and Fructooligosaccharides1 (FOS), which cannot be assimilated by the human body because it lacks the enzymes necessary for its metabolism, thus providing a lower level of calories compared to sucrose, being an excellent option for hypocaloric diets and for diabetics.
The Smallanthus Sonchifolius is a 100% Andean plant, its original habitat is the highlands of the Andes, between 1,800 and 2,800 meters above sea level, in temperate mountainous climates. The yacón is one of the 21 species that belong to the genus Smallanthus. It was domesticated, probably in the humid regions of Peru and Bolivia, from about 1200 BC.
